After the Holidays, I feel like my body needs a heavy-food rest and a health kick! I’m a healthy girl all year long but in January, when it’s cold outside, snow falls, and sidewalks are always icy (especially here in Montreal…), you move a little less and your body can’t take in heavy foods without feeling a little bloated or very full all the time.
That’s when I like to eat yummy salads that are filling, super healthy, easy to digest, and that give you glowing skin because of their magical ingredients (hello avocados!). When I mix these salads with a yoga workout or country skiing with dad, my body says a big thank you!
I invented this detox salad with leftover ingredients that I had to eat before leaving for my parents’ house for the Holidays. Yep, all of these were in my fridge…I did say I eat healthy!
I’m not big on giving specific ingredient measurement instructions. Put in as much of these power players as you like! Trust your cooking guts.
1 1/2 cups Soybeans
1 Apple cut in thin layers
A bunch of Pumpkin Seeds
For the dressing:
The juice of 1 Lemon
2 tablespoons of Apple Cider Vinegar
Pepper to taste
And add for a boost of energy, strength, and brainpower, either:
1 cup Couscous (cook it)
1 cup Quinoa (cook it)
Seared Tofu bites: I prepare the tofu in advance and add it to my salads for an extra source of protein. Cut extra-firm tofu in thin squares, add the spices you like and and cook them in a pan with 1-2 tablespoons of grapeseed oil, flipping it over and over until brownish. If you like it juicy, bitter and sweet: add my favorite fruit, grapefruit!
